Canoe trip provides opportunity to make campfire desserts.

I recently returned from a canoe trip with my children's church youth group. We were introduced to some yummy campfire treats, and I encourage you to try them on your next camping excursion! The delicious treats were prepared as individual packages and roasted in the coals for just a few minutes - quick and easy.

The first treat was a version of pineapple upside down cake. Slice a loaf pound cake into individual servings. Butter one side of each slice and plact the buttered side down on aluminum foil. Remember, each slice is packaged separately. Then sprinkle one tablespoon brown sugar on the cake slice and top with crushed pineapple. Wrap tightly in the foil and place on the coals for approximately 5 minutes. Carefully unwrap the hot foil and eat sweet cake straight from its package.

My favorite campfire dessert was the banana boat. Pull back a small portion of the peel on a banana, enough to allow you to slice the banana lengthwise. Be careful not to slice all the way through the banana! You want to be able to pull the banana slightly apart to create a "boat." Place the partially peeled banana on aluminum foil and tuck chocolate chips and miniature marshmallows in the split of the banana. Cover the split back up with the peel and wrap the entire banana in an aluminum foil package. Place the banana boat on the coals for about five minutes. Unwrap the foil and pull back the banana peel. The chocolate and marshmallows should be melted and flowing over the warm, soft banana. The dessert got even better when some campers added peanut butter!
