The egg cream is a popular soda-fountain drink invented in 1890 by candy shop owner Louis Auster in Brooklyn. To make one, leave the eggs in the fridge. Egg creams have no cream, no eggs.

The name comes from the white froth that crowns the drink. It resembles beaten egg whites. Here’s the recipe:

TIMELESS EGG CREAMS

1/2 cup cold whole milk
1 cup club soda water
2 tablespoons chocolate syrup

Pour milk into a soda or Coke glass. Add soda water to within an inch of the top. Stir with a long spoon until white head forms. Pour chocolate down side of glass and stir.

Drink immediately. Egg creams go flat in about 10 minutes.
