The newest attraction being built in Sumner County will cure more than just the appetite to place a bet, but appetites in general.  During the arena phase of the Kansas Star Casino, there will be three venues with menus.

"In the first phase, we were kind of methodical in our approach," said Peninsula Gaming, Vice President of Food and Beverage, Stefan Huba. "We started looking at what's in the local market, and what do we need to create an experience here that is appropriate for a temporary arena casino." Huba said that their goal was to create food items that were quality, fast, and consistent.

"We came up with three concepts and kept it really simple and smart," Huba said. During the arena casino phase, Panini Jo's, Haute Dog, and the Arena Grill will offer customers a variety of options.

Arena Grill
"Our largest area, that seats about 200, is the Arena Grill" Huba said. "The Arena Grill has three main types of fair. There's our salad station where we're going to make salads to order, and the other outlets we're going to have, we're going to make things to order so you get to visually see the freshness." The design of the Arena Grill is unique as well.

"It's literally like you're in a fish tank, it's all glass, so it's a commitment to quality and cleanliness," Huba explained. "You can see in our kitchens, you can see what our employees are doing." There is "char-broiled" station with hamburgers, and grilled chicken, and a pizza station.

Panini Jo's
"Panini Jo's offers, believe it or not, paninies; and 'jo's,' coffee," Huba explained. the Panini sandwiches are artisan crafted. "The one that I'm most excited about is, we have a panini with roast beef, some wonderful bacon - everything's good with bacon, right? Some cheddar cheese, balsamic, caramelized onions, and a little bit of bar-b-que sauce." Panini Jo's will also serve pastries.

"We have a chocolate filled croissant that is just amazing as well," Huba added.

Haute Dog
Another dining option in the temporary facility will serve hot dogs, with some unique twists. The sausages are especially made for the Kansas Star Casino and are geared towards old world quality, consistency of flavor and fresh ingredients.

"We wanted to make our hot dogs and give them a little bit of a spin," Huba said. Menu items at Haute Dog will include the classic style hot dog and the casino's "signature dog" topped with bacon and macaroni and cheese.

In the second phase, in the permanent casino, there will be a Woodfire Grille and the Kitchen Buffet.

"The second phase is going to be a ton of fun," Huba contineud. "We've got a 250 seat buffet in there, and there's action stations." There is an Italian station, American station, smokehouse station, Asian station, desert station.  The Woodfire Grille offers a bit of fine Kansas dining.

"It's a contemporary American steakhouse, with a strong emphasis on quality wine," the vice president said.  "It's going to have all local Kansas beef. No local Kansas seafood, sorry," he laughed. The casino will be shipping in fresh sea food regularly though.

One thing the Kansas Star Casino has tried to emphasize is buying local whenever they can.

"We try to source a lot of our products locally," Huba mentioned. "...If we use beef, we're going to use Kansas beef. There's a strong commitment to our local economy." And the menu prices are set at a level where a person wouldn't have to hit the jackpot just to eat at the casino restaurants.

"It's definitely very value driven, but definitely a lot of quality," Huba added. Price points on hamburgers and salads will be around $5, sandwiches- around $4.50. The Kansas Star Casino hopes to be open on Dec. 26, but officials are hopeful it could be open sooner. Huba is excited for people to see what the Kansas Star cuisine is all about.

"We've got a pretty good thing going here," Huba said.
