Chicken Picadillo Soup: Ingredients: 1 c each carrot, celery, and potato - cubed 1 tbsp kosher salt 1 tbsp chicken bouillon powder 1 tsp oregano leaves 5.5 oz can tomato juice 32 oz chicken broth 1/2 rotisserie chicken (white meat or dark) Oil We like to serve this beautiful comfort dish with Mexican rice and tortillas but it goes well with grilled cheese or bread.

KING COLE

Cole Wiens, son of April and Jeremy Wiens, of Wellington had a big week. The senior defensive end for the South Sumner Outlaws was elected Homecoming King as his team ended their regular season with an 8-0 record. Cole has been accepted into an accelerated law program (LEAD) through Wichita State. Through this program, he will begin his first year of the University of Kansas School of Law during his senior year at Wichita State.
